We use real, freeze-dried lemon in our formulations. Not a synthetic "natural flavor" cooked up in a lab. Not a shelf-stable citrus extract designed to taste identical from now until the heat death of the universe. Actual fruit, processed at sub-zero temperatures to lock in the volatile aromatic compounds that give real lemons their brightness and depth.
The trade-off? Lemons, like all living things, vary. Soil, harvest timing, and growing conditions all influence the final flavor profile. Why Midwest Mined Salt — Not Sea Salt?
This is one of the details we care about most, and it is especially important if you have MCAS, food allergies, or shellfish sensitivities.
Most commercial sea salt — even the "premium" stuff — is harvested from modern ocean brine pools. The open ocean. The same water that is home to shrimp, crabs, shellfish, and a dizzying number of marine organisms that shed proteins, chitin, and allergens into the brine. For the average consumer, trace contamination from marine life is negligible. For someone whose mast cells are spring-loaded and waiting for an excuse to fire, it is a real and unnecessary risk.
Our salt comes from a pristine, underground mine in the American Midwest. This ancient deposit was laid down millions of years ago — long before crustaceans even existed on Earth. It has been sealed beneath hundreds of feet of rock ever since, completely untouched by modern ocean chemistry, microplastics, or marine biology.
The result is a perfectly clean, allergen-free sodium chloride that gives us the electrolyte foundation we need without introducing a single variable that could trigger a reaction. Handcrafted Means Something Here

When powdered ingredients with different densities — heavy salt crystals, medium-weight sugar, and ultra-light freeze-dried fruit — get tossed into massive commercial blenders, physics takes over. The heavy stuff sinks. The light stuff floats. The result is stratification: layers of separated ingredients that produce wildly inconsistent scoops. One is mostly sugar. The next one is a salt bomb. Nothing hits the target ratio.
We avoid that entirely by hand-blending in micro 2-kilogram batches. At that scale, we maintain total control over the distribution of every ingredient. We can see and feel the consistency of the blend in real time. The result is that every single bag, every tin, and every test tube we pack hits the exact same carefully calibrated ratio of flavor and electrolytes.
It is slower. It is more labor-intensive. And it produces a meaningfully better product. That is the trade-off we are happy to make.
